Fast Apple Cake – Vegan Friendly
I love using seasonal fruit and vegetables in recipes. When it comes round to autumn, apples are a one of my favourites. Although these days it is easy to forget that fruit is seasonal because you can buy it all year round, my Fast Apple Cake is perfect for those cold autumn evenings. Sweet with a hint of spice, this quick and easy cake is ready to eat in just over an hour.
Fast Apple Cake - Vegan Friendly
Prepare the apples first. Peel them, cut in quarters and remove the seeds. Then cut into slices.
Mix all dry ingredients in a bowl.
Mix the wet ingredients in a jug. Then slowly add to the dry ingredients and mix well until you get a smooth consistency.
The batter will be very thick but don’t worry. Once you add the apples these will release their moisture as they bake.
Line the base of a 9 in (23cm) non stick cake tin with grease-proof paper.
Arrange some of the apples in a circular pattern to cover the bottom of the cake tin.
Spoon the batter into the tin and spread evenly. Be careful not to disrupt the apple pattern on the bottom
Gently fold the remaining apples into the batter.
Bake in the preheated oven for 40 - 45 minutes at 190 degrees (gas mark 5)
When ready, the cake should be slightly browned on top and slightly shrunken away from the edges of the cake tin.
Leave in the tin to cool down for about 5 minutes and then turn it out onto a rack so that the apple pattern is now on top.
Once it has cooled, gently peel off the grease-proof paper to reveal the apple pattern.
Dust with cinnamon or powdered coconut sugar. Serve with a scoop of vanilla ice cream.
