Raw Courgette Miso “Spaghetti”

If you are looking for a dish that is light yet supremely satisfying then look no further than Raw Courgette Miso Spaghetti. Not a great name but who cares! As Shakespeare said, “A rose by any other name would smell as sweet” and so it is with this great dish.

Although Raw Courgette Miso Spaghetti is light, I challenge you to eat too much! Yes, it is delicious but it is very satisfying and without that heavy feeling you get after a hearty stew or pasta. This makes it ideal for big appetites or for people trying to lose weight. It also makes a great starter for a Vegan meal and enables you to show off your spiralizer and raw food skills.

Raw Courgette Miso Spaghetti is impressively simple but certainly has the Wow factor.

Instructions
  1. Spiralize the courgette and sweet potato. I peel the potato, but leave the skin on the courgette.
  2. Sprinkle with salt according to taste and massage into your “spaghetti”
  3. Add the enoki mushrooms and mix.
  4. Into your blender, add the remaining ingredients: cashews, miso, lemon juice, lemon zest, avocado and the water and blend until you get a nice smooth and creamy consistency. You may need to add a bit more water. You need it to be a pouring consistency.
  5. Pour over your “spaghetti” and massage into your courgette/sweet potato pasta.
