Raw Courgette Miso “Spaghetti”

  1. Spiralize the courgette and sweet potato. I peel the potato, but leave the skin on the courgette.
  2. Sprinkle with salt according to taste and massage into your “spaghetti”
  3. Add the enoki mushrooms and mix.
  4. Into your blender, add the remaining ingredients: cashews, miso, lemon juice, lemon zest, avocado and the water and blend until you get a nice smooth and creamy consistency. You may need to add a bit more water. You need it to be a pouring consistency.
  5. Pour over your “spaghetti” and massage into your courgette/sweet potato pasta.
