Exquisite Kale and Figs Salad
This quick and delicious salad is ideal as a side dish or alternatively you can eat it on its own because it is surprisingly filling and satisfying. I love Kale and Figs Salad served with quinoa and millet but there are no strict rules. Kale is crammed with nutrients and figs are not only delicious but incredibly healthy. I love figs and always try to have some fresh ones at home, but you can also use the dried ones. This salad just ticks all the right boxes for health and flavour.

Ingredients
- 300 g kale
- 1.5 lemon (to juice)
- 1/2 tsp Himalayan salt
- 4 tbsp olive oil (extra virgin)
- 1/2 avocado
- 2 tbsp raw apple cider vinegar
- 1/2 tbsp coconut sugar
- 6-8 fresh figs (or dried)
- 1/2 tsp black pepper

Instructions
- Rinse the kale leaves and pat off any excess water with a clean tea towel or paper towel. Remove the stem from each leaf, then tear the leaves into small strips and place in a bowl.
- Add the juice of half a lemon , salt, and 1 tablespoon of olive oil to the leaves and massage thoroughly with hands. (This will soften the kale and reduce the size of leaves) Set aside.
- Now make the dressing. Place the juice from 1 lemon, plus 3 tablespoons of olive oil, ½ an avocado, 2 tablespoons of apple cider vinegar and 1/2 a tablespoon of coconut sugar in blender and mix until well combined.
- Toss the dressing with kale leaves until mix well.
- Chop the figs into small pieces and add to kale salad. Sprinkle with sesame seeds.
- Serve with quinoa, millet, brown rice, potatoes or just enjoy on its own 🙂
