Rinse the kale leaves and pat off any excess water with a clean tea towel or paper towel. Remove the stem from each leaf, then tear the leaves into small strips and place in a bowl.
Add the juice of half a lemon , salt, and 1 tablespoon of olive oil to the leaves and massage thoroughly with hands. (This will soften the kale and reduce the size of leaves) Set aside.
Now make the dressing. Place the juice from 1 lemon, plus 3 tablespoons of olive oil, ½ an avocado, 2 tablespoons of apple cider vinegar and 1/2 a tablespoon of coconut sugar in blender and mix until well combined.
Toss the dressing with kale leaves until mix well.
Chop the figs into small pieces and add to kale salad. Sprinkle with sesame seeds.
Serve with quinoa, millet, brown rice, potatoes or just enjoy on its own 🙂
