Fried Tofu with sweet potatoes
Fried Tofu with Sweet Potatoes is a delicious and cruelty free alternative to traditional scrambled eggs.
Many people struggle with cutting eggs from their diet because they are so versatile but it is worth doing . The egg industry has some very unacceptable practices and even if you do always buy free range, you cannot escape this fact. Tofu makes a great alternative and like eggs is an extremely versatile and nutritious food that can be cooked in many different ways.
Tofu has been a mainstay of some Asian cuisines for thousands of years but because it did not start showing up in the west until the 1960s some people mistakenly believe that it is a new invention especially for vegans and vegetarians.
Apparently tofu was actually first used about 2000 years ago in China and discovered when a cook accidentally curdled soy milk by adding seaweed, causing it to solidify. The things you learn on Google!!
Fried Tofu with sweet Potatoes is a great way to use up the leftovers in the fridge. Sweet potatoes are the base of the dish and you can just add your favourite veggies to the mix for your best flavours. I used chopped onion and kale and it tasted divine. However any little bits and bobs of left over veg that you like will probably work just as well.

- 1 medium size sweet potato (cooked)
- 1 cup curly kale
- 200 g tofu (I used smoked Tofu from Taifun)
- 1 clove garlic
- 1 small red onion
- 1/2 tsp turmeric powder
- 1 tsp cumin
- salt & pepper to taste
- coconut oil for frying (or an alternative)

- Chop garlic and onion very thinly.
- Add oil and sauté the garlic and onion on medium heat for a few minutes.
- Add tofu cut into small cubes to the onion and garlic and fry for 2-3 minutes. Add spices: turmeric, cumin, salt and pepper. Mix well with the frying ingredients.
- Add the kale, top the skillet with a lid, lower the heat to simmer, and allow to steam for a few minutes or until the kale is tender, but still crunchy.
- Mash the sweet potatoes and add to the frying vegetables. Mix well and serve with some tomatoes and green onion.
