Fried Tofu with sweet potatoes
medium size sweet potato
(I used smoked Tofu from Taifun)
small red onion
salt & pepper to taste
coconut oil for frying
(or an alternative)
Chop garlic and onion very thinly.
Add oil and sauté the garlic and onion on medium heat for a few minutes.
Add tofu cut into small cubes to the onion and garlic and fry for 2-3 minutes. Add spices: turmeric, cumin, salt and pepper. Mix well with the frying ingredients.
Add the kale, top the skillet with a lid, lower the heat to simmer, and allow to steam for a few minutes or until the kale is tender, but still crunchy.
Mash the sweet potatoes and add to the frying vegetables. Mix well and serve with some tomatoes and green onion.
