Raw marinara sauce
  1. First, prepare your courgette pasta. Spiralize the courgette and set aside in a bowl.
  2. Carve faces into your peppers. To do this, cut a round section on the top of the pepper. Then discard the seeds and scrape away the insides. Be very careful and begin to carve the jack-o’-lantern face with a knife. When complete, set aside.
  3. To prepare pasta sauce – add all the other ingredients to the bowl of your food processor. Processes for 1 minute or until you get the desired consistency. You can go for an ultra smooth or leave it with some of the unprocessed ingredients. I prefer to leave some tiny chunks of onion and pepper in it but it is up to you.
  4. Pour the mix over your courgette pasta and mix well with hands.
  5. Divide pasta amongst prepared peppers and stuff through the hole in the top. Pull the strands of pasta through the mouths and eyes of the Jack-o-Lanterns for the maximum horror film effect!
